I am really happy with my new recipe book called Leon, Happy Salads by Jane Baxter and John Vincent.
The picture shows my attempt at ‘and the beet goes on’ salad, which I had for my lunch today (with some prawns) and it was really fantastic. It is thinly sliced beetroot, carrots, red onion and radishes with a gorgeous dressing of pistachios, zest and juice of orange, garlic, chilli, balsamic vinegar and olive oil, and topped with feta cheese, orange segments, dill and mint. So refreshing and healthy.
The book is full of tasty salads, some with meat, some with fish, some vegan, some gluten free and most with a variety of interesting dressings made from easily sourced ingredients. There seem to be a few ingredients I have not heard of, such as pomegranate molasses, freekah and sumac, and I shall endeavour to find these.
The photos for every dish are beautiful and inspiring. I want to make them all!
